This is the best white bean soup recipe I tried so far and I love it not only because of the lovely flavor it has but also as it’s easy, simple, and affordable to make.

Although I seasoned this tasty recipe with salt and pepper, you can always add other great seasoning ingredients; for example fresh herbs, dried herbs, and spices.

  • Fresh rosemary.
  • Italian seasoning.
  • Tomato paste.
  • Red pepper flakes.
  • Smoked paprika.
  • Lemon juice.

Although I used two butter bean cans for this hearty soup you have many other options to use. Moreover, you can also use dried beans if you don’t want to use canned beans as I did. For this last option bear in mind, that you will have to soak the dried beans in water and cook them, this will increase the cooking time and preparation of this recipe.

  • Canned cannellini beans.
  • Navy beans.
  • White kidney beans.
  • Great northern beans.

ADDITIONAL INGREDIENTS

Besides this is a great white bean recipe as it is, you can always add more ingredients and personalize it to your taste.

  • Vegan milk: such as fat coconut milk and almond milk.
  • Vegetables: for example red pepper, sweet potato, carrots, and potatoes.
  • Roasted vegetables.

This creamy white bean soup recipe is rich, light, nutritious, and affordable. Enjoy this simple and easy-to-make soup as a comforting starter or as a main dish.

Ingredients

  • 1 Brown onion.
  • 1 Celery Stick.
  • 2 Tbsp. of Olive oil.
  • A pinch of salt.
  • 2 Garlic cloves.
  • 2 Canned butter bean.
  • 800 ml. of Vegetable broth.
  • 4 Tbsp. of Vegan parmesan cheese.
  • ¼ Tsp. of Himalayan salts.
  • Freshly ground black pepper.
  • A handful of chopped parsley.

Instructions

  1. In a large pot heat 2 tbsp. of olive oil at medium heat.
  2. Peel and dice the brown onion. Wash and cut the celery stick.
  3. Cook the onion and celery in the heated olive oil* for a few minutes with a pinch of salt.
  4. Then, add the canned beans, in this case, 2 cans of butter beans**. Stir well.
  5. Add the vegetable broth and salt and pepper.
  6. Bring to a boil and cook the white bean soup for around 20 to 25 minutes.
  7. Then, remove it from the stove and blend the white bean soup with an immersion blender (you can use other food processors too). You can decide the consistency you want if you want a more creamy or chunky soup. Also, you can blend half the soup and the mix with the rest of the soup.
  8. When you get the desired consistency, adjust the seasoning if necessary.
  9. Serve warm with vegan parmesan cheese and fresh parsley.

Notes

*If you want to make this white bean soup oil-free, replace the olive oil with veggie broth.

**Drain the canned beans and rinse them well before using.
