  • Vegan meat: Traditional Sloppy Joes are made with ground meat. This easy vegan sloppy joes is made with vegan ground beef; if you want to use other vegan-friendly alternatives to ground beef, such as mushrooms, walnuts, tofu crumbles, extra-firm tofu, or cooked lentils (for example, green or brown lentils).
  • Tomato sauce: I used passata and ketchup to make this sauce; however, you can use tinned chopped tomates, fresh tomatoes, tomato paste, tangy tomato sauce, or store-bought sauces. Additionally, you can add BBQ sauce or a hot sauce.
  • Veggies: This American classic recipe goes well with red and green bell peppers. Another option is to add grated carrots and onions, for example, yellow or white onions.
  • Sweetening: I used brown sugar for this great recipe, but you can also use maple syrup, agave, or demerara sugar.
  • Bread: I used a delicious vegan burger bun, which goes very nicely with this easy recipe. However, you can use other burger buns for this classic sandwich, such as gluten-free, white, or brown bread.
  • Oil: To sauté the onions and the red peppers, I used olive oil, but you can use other vegetable oils or vegan butter. For an oil-free option, sprinkle a pinch of salt and add vegetable broth.
  • Water: I used filtered water; alternatively, you can use mineral water or tap water.

This sloppy joe recipe is for the whole family and is great when planning main meals. I served this easy vegan recipe with crisps; however, you can try other delicious options that pair well with this vegan version of sloppy joes:

Instructions

SLOPPY JOE'S SAUCE

  1. Peel and dice the onion, red bell pepper, and garlic cloves.
  2. Place a large skillet on the stove at medium heat.
  3. Pour 1 tablespoon of olive oil.
  4. Add the onion and red pepper and sauté for a couple of minutes.
  5. When the onion and red pepper are soft and tender, add the chopped garlic cloves.
  6. Add the vegan ground meat (you can also use cooked green lentils, brown lentils, chopped mushrooms, chopped walnuts, or any combination of these). Cook for a few minutes.
  7. Pour the ketchup, passata, mustard, brown sugar, and water. Stir well and cook for a couple of minutes.
  8. Season to taste with black pepper and salt.

ASSAMBLE

  1. Place your sloppy joes sauce in your burger buns, or bread of your choice.
  2. Serve on its own or add side dishes, such as chips.

INGREDIENTS FOR CORN SOUP

Vegetables: although the star ingredient for this delicious and comforting soup is the corn kernels, you can add other veggies, besides the white onion, for example:

  • Corn or sweet corn: the star ingredient of this vegan version of corn soup is the corn. Although I used canned corn, this is a great recipe when you have plenty of fresh corn. As you can see, this recipe is very versatile; you can use canned corn, fresh corn cobs, and frozen corn. Bear in mind that if you are using fresh sweet corn, the cooking time might be longer, as you have to cook the corn cobs and then remove the kernels.
  • Potatoes: You can use Yukon Gold potatoes or other potatoes that are great when making mashed potatoes, as when you blend the ingredients later on, it will add a creamy texture to this delicious vegan corn chowder.
  • Red bell pepper.
  • Onions, besides the white onion that is already included in this creamy corn soup, you can also add green onions, chalotes, yellow onion, spring onions, etc.
  • Leek.

OTHER INGREDIENTS

  • Non-dairy milk: For this dairy-free corn chowder, I used light coconut milk; however, you can also use other options. For example, full-fat coconut milk, almond milk, and oat milk. If you want to use a vegan cream, you can try coconut cream, soy cream, cashew cream, etc. To make your perfect soup, you can use the non-dairy milk that you enjoy the most.
  • Beans, such as white beans, butter beans, and cannellini beans.
  • Vegan cheese: Even though I didn’t use vegan cheese in this recipe, you can add a melting vegan cheese of your choice, too. Additionally, you can use vegan Parmesan cheese.
  • Oil: To saute the onions, I used olive oil; you can use other vegetable oils or vegan butter as well.
  • In the non-vegan corn soup recipe, they sometimes add crispy bacon; you can veganise it by adding vegan bacon bits. 

HOW TO SERVE CORN SOUP?

To serve this easy vegan corn chowder recipe is quite simple. For example, you can serve it as you do with your favorite soups, such as a warm and comforting starter or as a main dish on a weekday night for a light meal.

Additionally, you can serve this soup with:

  • Roasted chickpeas instead of sweetcorn croutons. Or you can make the traditional bread croutons, but with a vegan recipe.

  • 2 White onions.
  • 2 Tablespoons of olive oil.
  • A pinch of salt.
  • 3 Garlic cloves.
  • 2 Cans of sweet corn.
  • 250 grams of Potatoes.
  • 1 Teaspoon of Paprika.
  • ½ Teaspoon of Nutmeg.
  • ½ Teaspoon of Himalayan salt.
  • 2 Cups of Vegetable broth.
  • 200 ml of Canned coconut milk.

Sweetcorn croutons

  • A handfull of sweetcorn kernels.
  • 1 Tablespoon of olive oil.
  • ½ Teaspoon of paprika.
  • ½ Teaspoon of oregano.

Instructions

SWEETCORN CROUTONS

  1. Preheat the oven to 180 °C (356 °F, approximately).
  2. Place the sweetcorn kernels in a small bowl.
  3. Pour the olive oil and spread it well.
  4. Add the herbs and spices and mix.
  5. Place a single layer of the flavored corn on a baking sheet covered with parchment paper.
  6. Bake for 10 to 15 minutes, depending on how crunchy you like your crotouns.

CORN SOUP

  1. Peel and dice the white onions.
  2. Place a large soup pot on the stove at medium heat.
  3. Pour the olive oil and heat it, then add the diced onion with a generous pinch of salt and cook for 2-3 minutes, or until soft.
  4. Peel and dice the garlic cloves and add them to the pot.
  5. Drain and rinse the canned corn and add it to the soup. Stir well.
  6. Peel and dice the potatoes and place them in the pot.
  7. Season with spices and pour the vegetable broth.
  8. Cook for about 10 minutes, then pour in the coconut milk and cook for another 5 minutes.
  9. Adjust seasoning if necessary.
  10. With an immersion blender, blend the corn soup. You can decide if you want a creamy soup or if you want to leave some potatoes or corn kernels for a chunky texture. If you use a food processor or a standard blender, you can take cups of the soup, blend them, and pour them back into the large pot.
  11. Serve warm.

Add your spices, such as ground cumin, ground coriander, turmeric, garam masala, and chili powder. Stir in a tablespoon of tomato paste and cook for a minute before adding one can of chopped tomatoes and one can of full-fat coconut milk. Mix well to create a smooth, creamy sauce.

Add one can of drained and rinsed chickpeas, stirring to coat them in the sauce. Season with salt and pepper to taste, and finish with a squeeze of fresh lemon juice to brighten the dish.

Garnish with chopped fresh cilantro and a sprinkle of toasted flaked almonds for extra texture. Serve your chickpea korma over fluffy basmati rice or with warm naan bread for a satisfying, plant-based meal that’s both nourishing and flavorful.

This chickpea Korma is a gently spiced and aromatic recipe. Built on warm flavors like cumin, coriander, and turmeric, with a hint of heat from chili. Fragrant garlic, ginger, and garam masala deepen the richness, while cardamom and cinnamon add subtle sweetness to the creamy sauce.  As you can see, you can use a lot of spices to season this delicious dish. Here I listed a few that you can try!

  • Cinnamon stick.
  • Cayenne pepper.
  • Freshly chopped chili, such as green chili.
  • Fresh herbs, such as fresh cilantro.
  • Cashew butter and almond butter.
  • Fresh ginger or ground powdered ginger.
  • Ground almond.
  • Bay leaves.
  • Curry powder. For example, tikka masala.
  • Lemon juice when serving.

In addition to these flavorful ingredients, you can also try korma curry paste and korma curry sauce.

INGREDIENTS FOR CHICKPEA KORMA

  • Chickpeas: Traditionally, this Indian dish is made with chicken; to make it vegan, I swap this ingredient for a vegan-friendly alternative. Cooked chickpeas, or garbanzo beans, are a great alternative. To make an easy vegan korma, I used canned chickpeas, as it is quick and simple for a weeknight meal; however, if you have raw chickpeas, you can cook them and add them to this vegan curry recipe.
  • Rice: I love Basmati rice, and it goes really well with a vegan chickpea curry. If you prefer or have another type of rice at home, there is no need to rush to the grocery store; you can also use other types, such as brown rice.
  • Plant-based milk: a great replacement for dairy-heavy cream is canned coconut milk. The texture and consistency are nice and smooth, ideal for this type of vegan curry recipe. Other options you can try include cashew sauce and cashew cream. If these options are not available, you can use regular plant-based milk, such as soy milk and cashew milk. Since these last options won’t give your recipe a creamy consistency, you can mix 2 teaspoons of cornstarch with 2 tablespoons of water, then add it to your chickpea korma.
  • Veggie curries: Since this is a vegetable curry, I used onion and garlic cloves for a simple, quick version. Other veggies that you can also add are, for example, sweet potatoes and French beans.
  • Tomato: for me, this recipe doesn’t need much tomato. In fact, some korma recipes don’t include tomatoes at all. I used tomato paste, and the result was really nice. If you wish, you can use fresh tomatoes or passata.

  • 1 Cup of Basmati rice.
  • 2 Cups of Water.

  • 2 Teaspoons of cumin.

RICE

  1. Rinse the basmati rice until the water comes out clear.
  2. In a large pan, add the rice and two cups of water.
  3. Cook the rice at a low heat.

KORMA

  1. In another large pan over medium heat, pour 3 tablespoons of vegetable oil of your choice.
  2. Peel and chop the onion, and add it to the pan together with the ground spices.
  3. Stir and cook them for 3-4 minutes or until the onion is soft.
  4. Peel and dice the garlic cloves and add them to the large pan.
  5. Add the tomato puree or tomato paste. Stir well.
  6. Rinse the canned chickpeas and add them to the pan.
  7. Then, pour the canned coconut milk or the cream-based sauce of your choice.
  8. Add the salt to your taste.

SERVE

  1. Serve the rice in bowls and add the vegan chickpea korma on top.

  • Onions: I love the flavour this ingredient gives to this recipe. I used a white onion; however, another type of onion that goes great with this recipe is the red onion. Which you can either add it to the enchilada mixture and bake it in the oven, or you can chop it and add it raw when serving.
  • Sweet corn: I used canned sweet (same as the beans), as this is a simple recipe to make those busy weeknights. But you can use frozen or fresh sweetcorn too.
  • Extra veggies: You can always add some more colorful veggies to this Mexican food, such as red bell peppers, green bell peppers, etc.

  • 1 Cup of White rice.
  • 1 Can of Black beans.
  • 1 Can of Sweet corn.
  • 500 ml. of Tomato sauce.
  • 600 ml. of Vegetable broth.
  • 1 White onion.
  • 1 Cup of Vegan cheese.
  • 1 Teaspoon of Salt.
  • 1 Teaspoon of Paprika.
  • 1 Teaspoon of Cumin.

Instructions

  1. Preheat the oven to 180 degrees C or 400 F.
  2. In a large bowl, add all the ingredients and seasoning, except the vegan cheese. Just add half a cup.
  3. Mix well all the ingredients
  4. In a baking dish, add the cheesy enchilada rice mixture and spread evenly.
  5. Then, sprinkle the vegan cheese shreds on top.
  6. Cover the baking dish with aluminum foil or parchment paper.
  7. Place in the center of the oven and bake for 15 minutes.
  8. After 15 minutes, remove the cover and place it on the first level of the oven to melt the vegan cheese.
  9. Serve warm with or without tortillas, such as flour tortillas.

SEASONING FOR BOMBAY POTATOES

These flavourful Bombay potatoes, or Bombay aloo, are classic in Indian cuisine. Furthermore, potatoes are a great ingredient in Indian cooking, as they absorb the amazing aromatic flavours of spices and herbs. For example, they are ideal when cooked in tomato sauce, curry, or soup. Here I listed a nice variety of spices, indian spices, herbs, and seasonings that combine well with this recipe, besides the seasoning I used for this recipe.

  • Chilli powder, such as red chili powder.
  • Chopped green chillies.
  • Curry leaves.
  • Cumin seeds.
  • Garam masala.
  • Curry powder.
  • Ground coriander or fresh coriander.
  • Fresh cilantro.
  • Dry curry.
  • Curry paste.
  • Cayenne pepper.
  • Turmeric powder.
  • Black mustard seeds.

In addition to these spices, you can also add lime and lemon juice to make this popular dish.

Bombay potatoes recipe

INGREDIENTS FOR BOMBAY POTATOES

As the name of the recipe indicates, the star of this recipe is the potatoes, combined with aromatic herbs and spices. Here you can find the list of ingredients I used for this recipe (besides the spices) and some alternatives you can try, for example, if you want to use other types of onions.

  • Potatoes: To make this indian meal, I used white potatoes, and the result was lovely. However, you can use other types of potatoes, such as baby potatoes, so you can use large potatoes or small ones. In term how to cook them, you can boil them or steam them, and you can cook them with the skin (especially if they are organic) or without. I decided to peel them and cut them into chunks to speed up the cooking time. Lastly, another option is to use sweet potatoes.
  • Onions: I used white onions for these spicy indian potatoes. Other onions that you can use as well are red onions or yellow onions. Finally, you can add chopped green onions when serving this great side dish.
  • Tomatoes: I tried to make a very simple and easy version of this bombay potatoes. Traditionally, you will see in other recipes that they use a food processor to blend fresh tomatoes and ginger. However, I wanted to make this recipe as easy as possible, so I used tomato puree or passata. Additionally, you can use a tin of chopped tomatoes.

Lastly, another option that you can try when making this wonderful dish is to cook the potatoes with the skin. In my house, we are not big fans of eating potatoes with the skin, and that’s why I peeled them. However, you can cook these Bombay potatoes as you wish, with or without the skin.

This is a great side dish you can bring or prepare for gatherings, such as a family reunion or celebration. In addition to this, you can combine this dish with a main course. For example:

  • 800 grams of Potatoes.
  • 2 Medium onions.
  • 3 Garlic cloves.
  • 2 Tablespoons of Extra virgin olive oil.
  • 250 grams of Tomato passata.
  • 1 Fresh tomato.
  • 2 Teaspoons of Cumin powder.
  • 2 Teaspoons of Ginger powder.
  • 1 Teaspoon of Turmeric.
  • 1 Teaspoon Paprika.
  • 1 Teaspoon of Garlic granules.
  • 2 Teaspoons of Curry powder.
  • 1 Teaspoon of salt.

Instructions

    1. Place a large pot of cold water on the stove at medium-high heat and bring to a boil*.
    2. Wash and peel the potatoes (you can also cook them with the skin). Cut the potatoes into big chunks.
    3. Add the potatoes to the boiling water and cook for around 15 minutes or until they are tender and soft.
    4. Peel and slice the onions and garlic cloves.
    5. Place a large non-stick frying pan on the stove on medium heat, and then pour the olive oil.
    6. Add the sliced onions to the hot oil with a pinch of salt.
    7. Sauté the onions until golden brown.
    8. Then, add the chopped garlic cloves, the whole spices, and the powdered spices. Mix well and cook for a couple of minutes.
    9. Wash and cut the tomato into chunks (I peeled and removed the seeds, but that's optional), and add them to the frying pan.
    10. Pour the tomato puree or passata, and cook for around 3-4 minutes.
    11. Wash and cut the tomato into chunks (I peeled and removed the seeds, but that's optional).
    12. Lastly, add to the large frying pan the tender potatoes, mix well, and cook for 4-5 minutes.
    13. Serve this great side dish warm.

Notes

*You can also cook the potatoes with a steamer.

Vegetable cutlets are a delicious, simple, and budget-friendly dish from Indian cuisine. They’re also highly versatile, allowing you to mix and match a wide range of vegetables and spices to suit your taste.

SEASONING FOR VEGETABLE CUTLETS

Spices are a key ingredient in Indian cuisine, and this is no exception. You can find many vegetable cutlet recipes, and you will see the great variety of ingredients and ideas to inspire you and personalise your recipe to your own taste, as I did. For example, I’m not a big fan of coriander leaves; instead, I can replace them with chopped fresh parsley.

Additionally, if you want to make this lovely recipe spicy, you can add chilli, such as green chilli, red chilli, chilli flakes, jalapeño, etc.

  • ½ kg. of Potatoes.
  • 250 grams of Frozen vegetables*.
  • 1 Tablespoon of Vegetable oil.
  • 3 Tablespoon of Bread crumbs
  • 1 Teaspoon of Powdered ginger.
  • 2 Teaspoon of Tumeric.
  • 1 Teaspoon of Cumin powder.
  • ½ Teaspoon of Himalayan salt.

Veg cutlet coating

  • 120 ml. of Plant-based milk (approx.).
  • 150 grams of Bread crumbs (approx.).

Cooking

  • Vegetable oil.

Instructions

VEG CUTLETS

  1. Wash and peel the potatoes, and cut them into small pieces. Place the potatoes in a steamer basket and cook them for 20 minutes or until they are soft to make a mash. If you are using organic potatoes, you can cook them with the skin.
  2. In another steamer basket, place the vegetables and cook them for 15 minutes.
  3. When the potatoes are done, drain any excess water and place them in a large bowl. 
  4. Make mashed potatoes as you would normally do, with a fork or a potato masher.
  5. In another bowl, place the vegetables. In this case, you can make a chunky mush using a fork or use a hand mixer to make a mash.
  6. Add the vegetable mash to the potato mash.
  7. Then add the rest of the ingredients: 3 tbsp of bread crumbs, 1 tsp of powdered ginger, 2 tsp of turmeric, 1 tsp of cumin powder, and ½ tsp of Himalayan salt. 
  8. Integrate the cutlet mixture. If you wish, you can add oil or just a little oil. If you want to reduce the amount of oil in this recipe, you can avoid it in this step. 

​COATING

  1. In a small bowl, add the plant-based milk.
  2. In another bowl, add the bread crumbs or panko breadcrumbs.
  3. With a spoon or just your hands, take a portion of the cutlet mixture and shape it into burger patties.
  4. Then, place the burger patties into the bowl with the bread crumbs, then into the bowl with plant-based milk, and lastly again in the bowl with bread crumbs. Press well when adding the bread crumbs to prevent the veg cutlets from breaking when you cook them.

COOKING

  1. In a frying pan, pour the vegetable oil of your choice and heat it until it gets hot.
  2. To know the right temperature to cook the vegan cutlets, add a tiny portion of bread crumbs to the oil. If you see loads of bubbles around it should be hot enough to cook your vegetable cutlets.
  3. Then, cook the coated cutlets until golden brown on each side.
  4. Once cooked, place the veg cutlets on a plate with paper towels to remove excess oil.

Notes

*For this veg cutlet recipe, I used frozen green peas, sweet corn, and carrots, but you can also use fresh veggies. The ratio is half the quantity of potatoes.
