Delicious lemon biscuits recipe, made of easy and simple ingredients. This recipe does not contain egg or butter. Enjoy these soft, chewy lemon cookies for breakfast or as a snack!
Ingredients
- 1 Tbsp. of Apple cider vinegar with mother (organic).
- 1 Lemon (zest and juice).
- 1 Pinch of salt.
- 70 ml. of Vegetable oil.
- 100 gr. of Sugar.
- 250 gr. of Self-raising flour.
Instructions
- In a bowl add 1 tbsp of apple cider vinegar and the sugar. Mix well.
- Then, add 70 ml of oil, lemon zest, and ½ lemon juice. Mix well.
- In a bowl sieve the flour, then add a pinch of salt and mix.
- Add the flour to the wet ingredients and integrate well, first with a spoon/fork and later with your hands (you don't need to knead the dough). If the cookie dough is dry you can add the rest of the lemon juice.
- Cover the cookie dough and refrigerate for around 30 minutes.
- Remove the cookie dough from the fridge and preheat the oven to 180 °C degrees (356 °F approx.).
- Put some flour on the kitchen worktop and spread half the dough with a rolling pin. Then cut your cookies in any shape you want.
- In an oven tray with grease-proof or non-stick baking paper (you can also spread some oil and sprinkle flour), place your cookies and cook them in the oven for around 20 minutes or until they are golden.
