Ingredients

  • 450 gr. Sweet potatoes.
  • 4 Tbsp. of Extra virgin olive oil.
  • 1 Tsp. of Oregano.
  • 1 Tsp. of Paprika.
  • 1 Tsp. of Garlic powder.
  • 1 Tsp. of Dried parsley.
  • ½ Tsp. of Himalayan salts.

Instructions

  1. Preheat the oven to 180 degrees C or 400 F.
  2. Wash and peel the sweet potatoes. Then, cut the sweet potatoes into slices (it can be thick rounds). Alternatively, you can use chopped sweet potatoes or sweet potato cubes.
  3. In a sheet pan, you can place parchment paper, or aluminum foil, or spread some olive oil on the base.
  4. Then, place a single layer of your sweet potato rounds so they can roast evenly.
  5. Drizzle olive oil on top of the sweet potato slices.
  6. Season with oregano, paprika, garlic powder, dried parsley, and salt.
  7. Place the large baking sheet pan in the oven and cook for around 25 minutes*.
  8. Remove the sheet pan from the oven and check if the sweet potatoes are cooked. They should be fork-tender and have crispy edges.
  9. Serve roasted sweet potatoes warm.

Notes

*Cooking times can vary depending on the oven you are using and if you are adding more sweet potatoes to this recipe. I used an electric fan-assisted oven.
