These mashed potatoes pancakes are super delicious and not only do kids love them, grown-ups too! It's easy to make, gluten and egg-free. Plus, you can use leftover mashed potatoes for a quick meal.

Ingredients

Mashed potatoes pancakes

  • 500 gr. of Potatoes.
  • 1 large white onion.
  • 2 Tbsp. of Olive oil.
  • ½ Tsp. of Parsley.
  • ½ Tsp. of Garlic powder.
  • 1 Pinch of Himalayan salt.
  • 1 Pinch of Black pepper.

Salad

  • 4 medium tomatoes.
  • 2 Avocados.
  • 1 Tbsp. of Olive oil.
  • 1 Pinch of Himalayan salt.
  • 1 Tsp. of Oregano.

Instructions

Mashed potatoes pancakes

  1. If you had leftover mashed potatoes, you can skip steps 2 and 4.
  2. Wash, peel, and dice the potatoes. Cook them in boiling water or a steamer until soft.
  3. Preheat the oven to 180 °C degrees (356 °F approx.).
  4. Drain and place the potatoes in a bowl and prepare a mashed with a fork or a potato masher.
  5. Peel and chop the onion, add it to the mashed potatoes and mix well.
  6. Season to taste with: olive oil, parsley, garlic powder, Himalayan salts, and black pepper (If you are preparing this mashed for kids you can avoid the pepper).
  7. Take a portion of mashed potatoes with a tbsp and place it on your hand and form a cake. Then, place the pancake on a baking dish with non-stick baking paper (you can add oil, spread oil on top or fry them too).
  8. Cook the mashed potatoes pancakes in the oven for around 20 to 25 minutes or until they get a golden crust.
  9. Once cooked you can place them on a plate with kitchen paper tissue to absorb the oil excess.

Salad

  1. Wash and cut the tomatoes and place them in a salad bowl.
  2. Season to taste with: olive oil, Himalayan salt, and oregano.
  3. Cut in half the avocado, remove the pit and with the help of a tbsp remove the content. Cut the avocado into slices.

Assemble

  1. Place the mashed potatoes pancakes on a plate, and add some tomato salad and avocados slices.
