EASY BOMBAY POTATOES RECIPE – INDIAN STYLE FOOD

SEASONING FOR BOMBAY POTATOES

These flavourful Bombay potatoes, or Bombay aloo, are classic in Indian cuisine. Furthermore, potatoes are a great ingredient in Indian cooking, as they absorb the amazing aromatic flavours of spices and herbs. For example, they are ideal when cooked in tomato sauce, curry, or soup. Here I listed a nice variety of spices, indian spices, herbs, and seasonings that combine well with this recipe, besides the seasoning I used for this recipe.

  • Chilli powder, such as red chili powder.
  • Chopped green chillies.
  • Curry leaves.
  • Cumin seeds.
  • Garam masala.
  • Curry powder.
  • Ground coriander or fresh coriander.
  • Fresh cilantro.
  • Dry curry.
  • Curry paste.
  • Cayenne pepper.
  • Turmeric powder.
  • Black mustard seeds.

In addition to these spices, you can also add lime and lemon juice to make this popular dish.

INGREDIENTS FOR BOMBAY POTATOES

As the name of the recipe indicates, the star of this recipe is the potatoes, combined with aromatic herbs and spices. Here you can find the list of ingredients I used for this recipe (besides the spices) and some alternatives you can try, for example, if you want to use other types of onions.

  • Potatoes: To make this indian meal, I used white potatoes, and the result was lovely. However, you can use other types of potatoes, such as baby potatoes, so you can use large potatoes or small ones. In term how to cook them, you can boil them or steam them, and you can cook them with the skin (especially if they are organic) or without. I decided to peel them and cut them into chunks to speed up the cooking time. Lastly, another option is to use sweet potatoes.
  • Onions: I used white onions for these spicy indian potatoes. Other onions that you can use as well are red onions or yellow onions. Finally, you can add chopped green onions when serving this great side dish.
  • Tomatoes: I tried to make a very simple and easy version of this bombay potatoes. Traditionally, you will see in other recipes that they use a food processor to blend fresh tomatoes and ginger. However, I wanted to make this recipe as easy as possible, so I used tomato puree or passata. Additionally, you can use a tin of chopped tomatoes.

Lastly, another option that you can try when making this wonderful dish is to cook the potatoes with the skin. In my house, we are not big fans of eating potatoes with the skin, and that’s why I peeled them. However, you can cook these Bombay potatoes as you wish, with or without the skin.

Spicy and tender Bombay potatoes with delicious Indian spices. It's an easy, economical, and tasty side dish. Perfect for making during the week!

Ingredients

  • 800 grams of Potatoes.
  • 2 Medium onions.
  • 3 Garlic cloves.
  • 2 Tablespoons of Extra virgin olive oil.
  • 250 grams of Tomato passata.
  • 1 Fresh tomato.
  • 2 Teaspoons of Cumin powder.
  • 2 Teaspoons of Ginger powder.
  • 1 Teaspoon of Turmeric.
  • 1 Teaspoon Paprika.
  • 1 Teaspoon of Garlic granules.
  • 2 Teaspoons of Curry powder.
  • 1 Teaspoon of salt.

Instructions

    1. Place a large pot of cold water on the stove at medium-high heat and bring to a boil*.
    2. Wash and peel the potatoes (you can also cook them with the skin). Cut the potatoes into big chunks.
    3. Add the potatoes to the boiling water and cook for around 15 minutes or until they are tender and soft.
    4. Peel and slice the onions and garlic cloves.
    5. Place a large non-stick frying pan on the stove on medium heat, and then pour the olive oil.
    6. Add the sliced onions to the hot oil with a pinch of salt.
    7. Sauté the onions until golden brown.
    8. Then, add the chopped garlic cloves, the whole spices, and the powdered spices. Mix well and cook for a couple of minutes.
    9. Wash and cut the tomato into chunks (I peeled and removed the seeds, but that's optional), and add them to the frying pan.
    10. Pour the tomato puree or passata, and cook for around 3-4 minutes.

    12. Lastly, add to the large frying pan the tender potatoes, mix well, and cook for 4-5 minutes.
    13. Serve this great side dish warm.

*You can also cook the potatoes with a steamer.
