FRENCH TOAST VEGAN

Delicious french toast is great not only for breakfast but also as a snack or even dessert. Furthermore, this vegan recipe is ideal when you have loads of bread that are not fresh and may go to waste. So enjoy this lovely recipe with a cup of tea or coffee and at the same time reduce food waste too.

WHAT’S FRENCH TOAST BATTER?

Traditionally, one of the main ingredients of French toast batter is eggs and cow milk. Nevertheless, as this is a vegan alternative to this traditional recipe I replaced the eggs with cornstarch and the cow’s milk with oats milk (other milk options are, for example, soya, almond milk, or the plant-based milk of your choice). Also, if you don’t have or prefer not to use cornstarch you can add 1 tbsp. of peanut or almond butter.

TOPPINGS FOR FRENCH TOAST

  • Fresh fruit, for example, strawberries.
  • Dried fruit, such as almond slices.
  • Glace cherries.
  • Dates.
  • Ice cream.
  • Cinnamon.
  • Chocolate chips.
  • Raisings.
  • Icing/powdered sugar.
  • Lemon/lime juice or zest.
  • Agave syrup.
  • Yogurt.

CAN YOU MAKE FRENCH TOAST WITH ANY BREAD?

Whilst preparing this recipe, I tried different types of bread that I had at home to see which one I like the most. As a result of trying a few different pieces of bread, I noticed that the batter in this recipe is versatile and goes well with white and brown bread. Furthermore, I loved the results I got using dry bread, which also makes using this recipe a great idea to use leftover and dry bread. So as always, it’s a matter of preferences and uses the bread you like or the one you have.

This french toast without eggs is super easy and quick to make. This vegan breakfast is ideal for kids too as is sugar (refined) free.

Ingredients

Batter

  • 150 ml. of Plant-based milk.
  • 1 Tbsp. of Maple syrup.
  • 1 Tbsp. of Vanilla extract.
  • 1 Tbsp. of Cornstarch flour.

Bread

  • 200 gr. of Bread of your choice*.

Cooking

  • Vegan butter or coconut oil.

Assemble**

  • 1 Tbsp. of Maple syrup.
  • ½ Banana.
  • 5 Blueberries.

Instructions

Batter

  1. In a bowl, pour 150ml of plant-based milk, 1 tbsp. of maple syrup, 1 tbsp. of vanilla extract and mix well.
  2. Then, add 1 tbsp. of cornstarch and mix well until you get a lump-free mixture.

Bread

  1. Cut your bread in slices of around 1cm or less (skip this step if you are using sliced bread).

Cooking

  1. Place a frying pan on the stove at medium heat.
  2. Cut one small portion of vegan butter (or coconut oil) and place it on the frying pan. Then spread evenly on the frying pan surface.
  3. Dip the bread in the batter mixture soaking on both sides. Then place it on the pan and cook each side until golden.

Assemble

  1. Serve hot with fresh blueberries, sliced banana, and maple syrup.

Notes

*I used French baguette bread.
