Avocado, spinach and mushroom
AVOCADO, SPINACH AND MUSHROOM TOAST
This healthy mushroom breakfast is adaptable and you can use any kind of mushroom you like or have, no need to rush to the grocery store. I used white mushrooms but, brown, porcini, shiitake or oyster mushrooms can be great too!
As simple as this recipe is to make, is really versatile too! If you want to have a healthy snack, an appetizer or a side dish this recipe will be a delight. You can always add your favorites herbs and spices such as: black pepper or chilli flakes.
VEGAN & GLUTEN FREE
This simple, quick, nutritius vegan recipe is also gluten free! You can also enjoy and try this breakfast with any toast or bread that you like.
- 1 Ripe avocado.
- 4-6 Spinach leaves (approx.).
- 1-2 Mushroom(s).
- 1 tbsp. Water.
- 2 Gluten free toasts.
- Himalayan salt.
- Clean and slice the mushrooms and cook them in a saucepan with salt and 1 tbsp of water (you can use oil or butter) for 5 minutes.
- Cut and remove the skin of the avocado. Prepare a mashed with a fork, it doesn't have to be perfect or lump free. Season with salt and mix well.
- Spread the mashed avocado on the toasts. Place the spinach leaves and the mushrooms slices on top.
