SEASONING FOR BAKED POTATO WEDGES
To season potato wedges, start by patting them dry to help the spices stick and ensure crispiness. Toss the wedges in a large bowl with olive oil until evenly coated, which helps the seasoning adhere and promotes browning. If you like heat, sprinkle in chilli powder or cayenne pepper. Toss everything thoroughly so each wedge is well coated, then let them sit briefly before baking to absorb the flavours.
- Italian seasoning.
- Onion powder.
- Curry powder, for example, Madras.
- Fresh and dried herbs, such as parsley, oregano, thyme, rosemary, and basil.
- Chopped fresh garlic.
- Salt, for example, kosher salt, sea salt, and flavoured salt such as garlic salt.
INGREDIENTS FOR BAKED POTATO WEDGES
- Potatoes: The star ingredient of this recipe is the potato. You can use russet potatoes or other potato types that you normally use for roasted potatoes. Additionally, you can use sweet potatoes, too. Regarding the size of the potatoes, ideally, large potatoes are better for this recipe. However, if you have medium or small potatoes at home, you can use them.
- Vegetable oil: Olive oil is a great oil when you are making potato wedges. If you don’t have this ingredient, you can use another vegetable oil, such as sunflower oil.

VEGAN PARMESAN CHEESE
Although nowadays it’s easier to find vegan alternatives to dairy products, sometimes, where we live, that’s not an option, or if it is, it can be expensive. Therefore, if you want to make your homemade vegan Parmesan cheese, you can make it yourself with only 4 ingredients:
- ½ Cup of raw cashew nuts.
- 2 Tbsps of Nutritional yeast.
- ½ Tsp of Garlic powder.
- ½ Tsp of Himalayan salt.
INSTRUCTIONS
- Add ½ cup of raw cashew nuts to a high-speed food processor.
- Pulse the food processor and check the texture and consistency of the raw cashews until you reach the desired taste.
- Then, add 2 tbsp. of nutritional yeast, ½ tsp. of garlic powder, and ½ tsp. of Himalayan salt. Pulse again to integrate the ingredients.
- To store your vegan Parmesan cheese, place the Parmesan cheese in a glass/jar container with a lid and keep it refrigerated in the fridge.

HOW TO SERVE BAKED POTATO WEDGES?
Baked parmesan potato wedges are easy to serve and perfect for many occasions. Arrange them on a platter and sprinkle extra Parmesan and chopped parsley on top for a fresh finish. Serve them hot with dipping sauces such as garlic aioli, marinara, spicy mayo, or ranch to add variety and flavour. As a side dish, pair the wedges with grilled vegetables, a crisp green salad, burgers, sandwiches, or wraps for a balanced meal. For a simple but elegant touch, stack them neatly in a bowl and add ground black pepper with a drizzle of olive oil. Serve immediately after baking to keep them crispy outside and fluffy inside.

VEGAN BAKED PARMESAN POTATO WEDGES - OVEN ROASTED
Crispy vegan baked parmesan potato wedges are golden, garlicky, and coated in dairy-free cheesy crumbs—perfectly seasoned and oven-roasted to crunchy perfection.
Ingredients
- 500 grams of Potatoes.
- 3 Tablespoons of Vegetable oil.
- 1 Teaspoon of Garlic powder.
- 1 Teaspoon of Paprika.
- 1 Teaspoon of Himalayan salt.
- 4 Tablespoons of Vegan parmesan cheese.
Instructions
- Precalienta el horno a 180 °C/350 °F.
- Wash the potatoes well and cut them into wedges.
- You can make this step in two different ways. I placed the potato wedges in a single layer on a baking dish* (you can use a sheet pan as well), with the potato skins on the bottom of the dish.
- I brushed the potato wedges with olive oil using a kitchen brush. Then I sprinkle the season. Lastly, I drizzle a little bit more olive oil.
- Another option is to put in a large bowl the potato wedges and add the vegetable oil. Then, add the seasoning mixture.
- Place potato wedges on the baking dish or sheet pan and sprinkle the vegan parmesan cheese.
- Place the baking dish in the hot oven, and bake for around 40 minutes.
- Serve this delicious appetizer warm and with your favorite dipping sauce.

*You can also use parchment paper on the base of the sheet pan.
