This easy vegan banana cake is now a classic recipe every time we have spotty bananas or over-ripe bananas at home. By adding easy-to-find ingredients, such as flour, sugar, oil, and a few more to the mashed bananas you can get a great moist banana cake.

I used caramel extract for this vegan banana cake recipe as I loved how well it goes with the banana flavor. However, you can use other flavorful and aromatic ingredients with this recipe. Remember that in the following section, you can see many vegan options to use in this recipe, such as oils. You can change the result of your banana cake depending on the oil you want to use.

BANANA CAKE INGREDIENTS

  • Bananas: this recipe is ideal when you have brown bananas
  • Vegetable oil: I used regular vegetable oil which is a neutral oil in terms of flavoring. Other oils that you can also use in this recipe are sunflower oil, olive oil, canola oil, and melted coconut oil.
  • Sweetener: even though over-ripe bananas are sweet you still need to add some extra sweetener which can be: white sugar (check if it’s vegan-friendly), brown sugar, demerara sugar, agave, coconut sugar, and pure maple syrup.
  • Milk: this recipe doesn’t have milk; however, if you want to use milk in a vegan baking recipe (non-dairy milk) you can use coconut milk, almond milk, oat milk, soy milk, etc.
  • Flour: I used self-raising flour, but you can use all-purpose flour, whole wheat flour, plain flour, almond flour, and add bicarbonate of soda or baking powder to make the cake rise.
  • Nuts: this easy cake goes very nicely with walnuts on top of the cake or inside. Furthermore, you can use or add other nuts; such as pecan, almonds, peanuts, and pistachios.

This banana cake recipe is moist, healthy, really easy to make, and great when you have overripe bananas. It has a great texture and is full of flavor with the great addition of the salted caramel extract making this a delicious blend of flavors that works flavors so well together.

Ingredients

  • 2 Large Ripen bananas.
  • 60 ml. of Vegetable oil.
  • 1 Tbsp. of Salted caramel extract (or vanilla extract).
  • 80 gr. of Sugar.
  • 200 gr. of Self-raising flour.
  • A Pinch of salt.
  • 50 gr. of Walnuts.

Instructions

  1. Preheat the oven to 180 °C degrees (356 °F approx.).
  2. Place a non-stick baking paper/parchment paper on a cake tin. Or, spread some cooking oil evenly (you can use your fingers or a cooking brush), and sprinkle flour.
  3. Peel the bananas and place them in a large bowl. With the help of a fork to prepare a banana mash, you can decide if you want to be lump-free or not.
  4. Pour the wet ingredients: 60 ml. of vegetable oil and 1 tbsp of salted caramel extract (you can use vanilla extract too). 
  5. Then add 80 gr. of sugar of your choice and mix well.
  6. Add the 200 gr. of flour (together with a pinch of salt) gradually and integrate well.
  7. Pour the banana cake batter into a cake tin and spread it evenly. Add the walnuts and place the banana cake in the oven.
  8. Cook the banana cake for around 25 minutes. You can use a clean knife to check if the cake is ready, insert the knife in the center of the cake, it comes out clean, and the cake is ready!
  9. Let the banana cake cool down to room temperature.
