ROASTED GARLIC WITH WHITE BEAN DIP
This is an affordable and easy-to-make aromatic roasted garlic and white bean dip. Enjoy this versatile recipe with veggies, toasts, wraps, and nachos.
Ingredients
- 1 Raw garlic head.
- 3 Tbsp. of Extra virgin olive oil.
- 3 Tbsp. of Fresh lemon juice.
- 4 Tbsp. of Vegetable broth.
- 1 Tin/cans white beans.
- A pinch of Black pepper.
- A pinch of Himalayan salts.
- A handful of fresh parsley.
Instructions
ROAST GARLIC
- Preheat the oven to 400 °F degrees (180/200 °C approx.).
- With a sharp knife cut the top of the whole head of garlic.
- Drizzle with olive oil, around 1 tsp of olive oil, and sprinkle 1 pinch of salt on top of the exposed cloves.
- Wrap the head of garlic with parchment paper (or a piece of foil/aluminum foil/tin foil).
- Place the garlic on a baking tray and roast in the center of the oven for 40 minutes or until the garlic gets golden and soft.
- Remove from the oven and let the garlic cool slightly at room temperature.
MAKING A CREAMY DIP
- Peel the roasted garlic cloves, then add them to a food processor.
- Open the white bean can drain, and rinse well. Add the white beans to the food processor.
- Then, add the rest of the ingredients, lemon juice, olive oil, black pepper, salt, and little by little the vegetable broth depending on the desired consistency.
- Blend all the ingredients in the food processor until you get a creamy white bean dip. You can make this creamy dip more fluid if you add more vegetable broth.
