Ingredients

  • 1 Raw garlic head.
  • 3 Tbsp. of Extra virgin olive oil.
  • 3 Tbsp. of Fresh lemon juice.
  • 4 Tbsp. of Vegetable broth.
  • 1 Tin/cans white beans.
  • A pinch of Black pepper.
  • A pinch of Himalayan salts.
  • A handful of fresh parsley.

Instructions

ROAST GARLIC

  1. Preheat the oven to 400 °F degrees (180/200 °C approx.).
  2. With a sharp knife cut the top of the whole head of garlic.
  3. Drizzle with olive oil, around 1 tsp of olive oil, and sprinkle 1 pinch of salt on top of the exposed cloves.
  4. Wrap the head of garlic with parchment paper (or a piece of foil/aluminum foil/tin foil).
  5. Place the garlic on a baking tray and roast in the center of the oven for 40 minutes or until the garlic gets golden and soft.
  6. Remove from the oven and let the garlic cool slightly at room temperature.

MAKING A CREAMY DIP

  1. Peel the roasted garlic cloves, then add them to a food processor.
  2. Open the white bean can drain, and rinse well. Add the white beans to the food processor.
  3. Then, add the rest of the ingredients, lemon juice, olive oil, black pepper, salt, and little by little the vegetable broth depending on the desired consistency.
  4. Blend all the ingredients in the food processor until you get a creamy white bean dip. You can make this creamy dip more fluid if you add more vegetable broth.
  5. Check the seasoning and adjust if necessary.
