MASHED BUTTERNUT SQUASH

Super creamy, smooth, and delicious butternut squash mashed. This recipe is full of flavor, healthy and nutritious, ideal for kids, and great as a baby puree too!
Ingredients
- 600 gr. of Butternut squash.
- 350 gr. of Potatoes.
- 1 Onion.
- 2 Garlic cloves.
- 1 Pinch of Himalayan salt.
- ½ Tsp. of Ground nutmeg.
- ½ Tsp. of Ground garlic.
- 1 Pinch of Black pepper (optional).
Instructions
- Wash, peel, and cut in cubes the butternut squash and the potatoes. Place them in a cooking pot with water and a pinch of salt. You can add bouillon powder or vegetable stock (that's optional).
- Peel and cut the onion, then place it in the saucepan together with 2 peel garlic cloves.
- Let the water boil and cook for around 20 minutes or until the vegetables get softened*.
- Once the vegetables are cooked to your taste, drain the water (I used this vegetable water/cooking water to make a soup. You can store it in a fridge for a couple of days).
- Mash all the ingredients with a blender or a hand blender until you get a smooth and homogeneous consistency.
- Season to taste with: Himalayan salt, ground nutmeg, ground garlic, and black pepper (optional or just for adults).
Notes
*If you prefer, you can steam the vegetables.
