The star ingredient of this easy recipe is the wonderful carrot. As I had loads of them at home that I didn’t want to go to waste, I decided to make a maple syrup glaze using large carrots.
This is an oil-free maple recipe, as I wanted to make an alternative option when roasting vegetables in the oven. However, you can add or replace the maple syrup and make these delicious roasted carrots with olive oil or vegan butter.

If you want to make this carrot recipe with other types of carrots or other veggies, there are many vegetables that you can use. For example:
- Baby carrots.
- Organic carrots, for example, if you don’t want to peel them.
- Rainbow carrots, by using different color types. Such as the yellow and purple ones.
- Brussels sprouts.
- Green beans.

Sweet roasted carrots glazed with maple syrup, this easy oil-free recipe enhances natural flavor with natural sweetness, making a wholesome, delicious side dish
Ingredients
- 750 grams of Carrots.
- 3 Garlic cloves.
- ¼ Cup of Maple Syrup.
- 1 Teaspoon of Paprika.
- Ground black pepper.
- ½ Teaspoon of Salt.
Instructions
- Preheat the oven to 180 °C (356 °F, approximately).
- Wash and peel the carrots (you can leave them with the skin if you wish).
- Cut the carrots into slices or the shape you prefer.
- In a small bowl, pour the vegan maple syrup and the spices.
- Peel and chop the garlic cloves and add them to the bowl. Mix well.
- Place the carrots in a large bowl, pour the maple mixture, and spread it well on all the carrots.
- In a baking dish, place the carrots in a single layer.
- Cover the baking dish with parchment paper or aluminum foil and bake in the oven for approximately 20-25 minutes.
- After that time, remove the parchment paper or aluminum foil and bake for another 10 to 15 minutes to get caramelized edges.
- Serve warm and adjust seasoning for a perfect harmony of flavors.
