For example, I didn’t have 2 cans of butter beans, so I replaced one of them with cannellini beans, as I had loads.

  • Sun-dried tomatoes: This can be a pricy ingredient and sometimes not that easy to find. As an alternative, if you are lucky enough to live in a sunny area, you can make your own; if this is not an option, you can replace them with cherry tomatoes or just fresh tomatoes.
  • Tomato paste:
  • Garlic: Minced garlic gives a unique flavour to this recipe; together with the olive oil, they make a great start when cooking this recipe. If you wish, you can replace this ingredient with its dried version, garlic powder.
  • Spinach: this ingredient not only adds loads of nutrition to your dish but also a nice flavour. If you don’t have fresh spinach or baby spinach when making this dish, you can use frozen spinach.
  • Plant-based cream: to make this recipe vegan, I replace the dairy-heavy cream with canned coconut milk. Alternatives to this include coconut cream or cashew cream. In addition to this, you can make a vegan bechamel sauce using vegan butter and vegan milk.
  • Fat: To cook the minced garlic cloves, I used olive oil; you can replace this ingredient with other vegetable oils, or you can also use vegan butter.

Creamy butter beans simmered with garlic, sun-dried tomatoes, cream, and herbs—rich, cozy, and irresistibly comforting. Enjoy this recipe as a great side dish.

Ingredients

  • 2 Tablespoons of Olive oil.
  • 4 Large garlic cloves.
  • 1 Tablespoon of Tomato paste.
  • 5 Sun-dried tomatoes.
  • 100 ml of Vegetable broth.
  • 200 ml. of Canned coconut cream.
  • 50 grams of Spinach.
  • 2 Cans of Butter beans.
  • ¼ Teaspoon of Himalayan salt.
  • 1 Teaspoon of Paprika.
  • A pinch of ground black pepper.

Instructions

  1. Place a large skillet on the stove at medium heat.
  2. Pour 2 tablespoons of olive oil and the chopped sun-dried tomatoes.
  3. Cook them for 2-3 minutes.
  4. Pour the vegetable stock, the tomato paste, and the coconut cream. Stear well and low simmer for a couple of minutes.
  5. Add the white beans, the seasoning, and the spinach.
  6. Cook at medium-low heat for a few minutes, stirring occasionally.
  7. Serve warm and enjoy!
