CREAMY BUTTERNUT SQUASH PASTA SAUCE WITH CARAMELIZED ONIONS

Creamy Butternut squash pasta sauce with caramelized onions
Delicious, silky, and creamy pasta sauce, really easy to make. This homemade vegan recipe sauce is super simple to make and packed with flavor. Impress your loved ones with this pasta dish!
Ingredients
- 400 gr. of Butternut squash.
- 1 Onion.
- 2 Garlic cloves.
- 1 Tbsp. of Sesame oil (optional).
- 2 Tbsp. of Sugar (I used demerara).
- 300 ml. of Canned coconut milk.
- 1 Pinch of Himalayan salt.
- 1 Pinch of Black pepper.
- ¼ Tsp. of Nutmeg.
- 250 gr. of Spaghetti or pasta of your choice.
Instructions
- Put water to boil and then cook the pasta (follow package directions).
- Peel and dice the butternut squash and cook in a steamer until it softens (you can also boil the butternut squash).
- Peel and slice the onion. Cook them in a pan with oil and salt. Then add 2 tbsp of sugar and mix well.
- Peel and cut the garlic cloves and cook them with the onions.
- Once the onions are caramelized to your taste remove them from the heat.
- When the butternut squash is cooked place them in a blender. Pour the milk little by little and mix well.
- When you get a creamy consistency and lump-free, pour it into the pan with the onion and garlic cloves.
- Season to taste with: Himalayan salt, black pepper, and nutmeg. Mix well and cook at medium heat for a few minutes.
- Lastly, you can add the pasta to the sauce and mix in the pan or you can serve the pasta on a plate and pour the sauce.
