CARROT AND CORIANDER SOUP RECIPE
This carrot and coriander soup is a classic soup that you can enjoy with cold days are coming. I normally cook this recipe when fall/autumn arrives as I also like the lovely orange color, for me it matches the beginning of the cold season. MAKE IN ADVANCE & STORAGE
There is no doubt that this is an easy carrot and coriander soup and it’s a great recipe to make when you have loads of carrots and you don’t know what to do with them. So, if you have carrots that may go to waste soon, you can cook this recipe in advance. Once it cools down to room temperature, then place it in a lidded container (preferably an airtight container). You can keep refrigerated for a couple of days until consumption or you can freeze it for up to six months. This also applies if you have leftover soup.

CARROT AND CORIANDER SOUP RECIPE
Delicious, aromatic, and flavorful carrot soup with fresh chopped coriander. Enjoy this warm, easy-to-make, comforting soup as a great starter or main dish.
Ingredients
- 1 White onion.
- 1 Tbsp. of Olive oil.
- 2 Garlic cloves.
- 650 gr. of Carrots.
- A pinch of Salt.
- 1 Litre of Vegetable broth.
- A handful of fresh coriander.
Instructions
- Peel and dice the onion and garlic cloves.
- Place a large pot/large saucepan on the stove at medium heat.
- Pour the olive oil*, add the peeled and diced onions and garlic cloves, then fry for a few minutes.
- Peel and dice the carrots, then add them to the large saucepan and stir well.
- Then, pour the vegetable broth/vegetable stock, bring it to a boil, and simmer for around 30 minutes or until the carrots are tender and soft.
- Once your carrot and coriander soup is cooked to your taste remove from the heat.
- Check the season and adjust to your taste with more salt, or add black pepper if necessary.
- Blend the carrot and coriander soup with a food processor or a hand blender/immersion blender/stick blender until you get a creamy consistency (alternatively you can use a soup maker)
- Place your carrot and coriander soup in soup bowls and serve topped with roughly chopped fresh coriander.
Notes
*You can also use vegan butter, for an oil-free option cook them with vegetable broth.
