Super cozy vegan winter soup to warm you up during the cold season. This is a great soup for the cold weather, plus is quick, easy, and delicious!

Ingredients

  • 2 Garlic cloves.
  • 1 Onion.
  • 2 Tbsp. of Olive oil.
  • 1 Pinch of Himalayan salt or sea salt.
  • 1 Litre of Water.
  • 1 Vegetable cube stock.
  • ½ Tsp. of Ginger powder.
  • ½ Tsp. of Caril curry.
  • 1 Tbsp. of Soy sauce.
  • 125 gr. of Noodles.

Instructions

  1. Peel and dice the garlic cloves and onion. Cook them in a cooking pot with olive oil and a pinch of salt for around 5 minutes.
  2. Then pour 1 liter of water and 1 vegan cube stock. Stir well.
  3. Season to taste with: ginger powder, caril curry and, 1 tbsp of soy sauce.
  4. Add the noodles of your choice* and cook to your taste.

Notes

*I used a fresh noodle to speed up the cooking time, but you can also use dried noodles.
