This vegan asparagus soup has a creamy texture without the cream or any milk products! It's really easy to make with fresh vegetables and is oil-free too!

Ingredients

  • 1 Litre of Water.
  • 1 Tsp. of Vegetable vegan Bouillon powder (optional).
  • 350 gr. of Fresh asparagus.
  • 1 Small Carrot.
  • 1 Medium Potato.
  • 1 White onion.
  • 2 Garlic cloves.
  • 1 Pinch of Himalayan salt.
  • 1 Pinch of Black pepper.
  • 1 Tbsp. of Nutritional yeast.

Instructions

  1. Pour 1 liter of water to boil and add 1 teaspoon of vegetable vegan Bouillon powder.
  2. Peel (optional) and dice the potato and the carrot.
  3. Peel and dice the onion and the garlic cloves.
  4. Wash and diced the asparagus.
  5. Add all the veggies in the water, heat to boiling, and stir from time to time.
  6. Leave the pot lid halfway so that a little water evaporates.
  7. Once the veggies are softened and cooked, turn off the heat. Use a mixer to blend all the ingredients.
  8. Serve in a soup bowl, then add some Himalayan salt, black pepper, and nutritional yeast.
