It’s super easy to make these absolutely delicious roasted vegetables with vegan sausages. Also, this straightforward recipe is not only easy to prepare but is a versatile recipe as you can use and combine many different vegetables to roast. Furthermore, you can try lovely aromatics and flavorful spices and herbs to season this vegan food.

In addition to this, I replaced the meat sausage (normally this type of recipe is made with chicken sausage, smoked turkey sausage, smoked sausage, etc). Instead, I used a veggie sausage and the best vegan sausages I know so far; however, you try other great meat alternatives such as seitan sausages. For example, you can try homemade vegan sausages, vegan hot dog, sausage patties, and vegan burgers.

SEASONINGS FOR ROASTED VEGETABLES

For this lovely roasted vegetables recipe I used minced garlic, paprika, and oregano together mixed with olive oil. Then I sprinkled Himalayan salts when I served this comforting vegan food. If you want to add or replace any of the seasonings that I used, here I listed other delicious spices and herbs to personalize this recipe. In addition to this, you can add fresh herbs when serving this dish.

ROASTED VEGETABLES WITH SAUSAGE RECIPE

Easy and delicious roasted vegetables with sausages. This great recipe can be prepared in minutes and cooked without much effort, which is ideal to make on a busy day.

Ingredients

  • 5 Tbsp. of Extra virgin olive oil.
  • 6 Vegan sausages.
  • 500 gr. of Potatoes.
  • 250 gr. of Butternut squash.
  • 2 Large onions.
  • 3 Garlic cloves.
  • 1 Tsp. of Paprika.
  • 1 Tsp. of Dried oregano.
  • ¼ Tsp. of Himalayan salts.

Instructions

  1. Preheat the oven to 180 degrees C or 400 F.
  2. Spread 2 of olive oil on the base of a glass baking dish or a sheet pan (to reduce the amount of oil in this recipe you can place aluminum foil or parchment paper on the base of the baking dish).
  3. Peel and slice the onions. Place on the base of the baking dish.
  4. Peel and cut the potatoes and butternut squash into cubes. Add all the veggies to the baking dish and spread them evenly.
  5. Then, you can add the vegan sausages. You can add them whole or cut them (as I did).
  6. In a small bowl, pour 3 tbsp. of olive oil, paprika, and oregano. Peel and cut the garlic cloves and add the minced garlic to the spice mixture. Stir well.
  7. Spread the spice mixture on the vegetables and vegan sausages (you can use a cooking brush).
  8. Cover the baking dish with aluminum foil or parchment paper.
  9. Place the baking dish in the center of the oven and cook for 30 minutes.
  10. After 30 minutes, remove from the oven and mix the ingredients. Place the baking tray back into the oven and bake for another 30 minutes*.
  11. Once this recipe is cooked to your taste serve warm.

Notes

*Cooking time can vary depending on the oven you are using. I used an electric fan-assisted oven. Also, depending on the vegetables you use. I used root vegetables which take longer to cook, and other vegetables cook/bake quicker.
