HEARTY VEGETABLE BARLEY SOUP – EASY VEGAN RECIPE
This vegetable barley soup recipe is a great dish in many ways, it’s affordable, made with simple ingredients, healthy, oil-free, high in fiber, and easy to make. Furthermore, you can adapt this soup recipe to your preferences using your favorite veggies or the ingredients you already have at home; such as fresh vegetables, frozen vegetables, beans, etc.
BARLEY SOUP SEASONINGS
This vegan barley soup recipe is easy to season, for me with just salt and garlic powder was enough and I love it. However, you can always add extra flavor to your soup during the cooking or when serving by adding more depth of flavor; for example with chili flakes.

There are different types of barley that you can use, I choose pearled barley as it takes less time to make, in this case, was around 30 minutes of cooking.
If you wish or have another type of barley you can also use it for this recipe. Â Furthermore, if you want to replace this ingredient with another gluten-free option (check the package label and look for a certified gluten-free logo) such as a whole grain o cereal grain you can use brown rice.

This delicious and comforting vegetable barley soup recipe is a great way to make a healthy and easy recipe at an affordable price with simple ingredients.
Ingredients
barley
- 1 Cup of Pearl Barley.
- 3 Cups of Water.
- A Pinch of salt.
Soup
- 1 Litre of Vegetable broth.
- 2 Medium carrots.
- 1 Large Tomato.
- 1 Cup of Garden peas.
- 2 Fresh garlic cloves.
- ½ Tsp. of Salt.
- ½ Tsp. of Garlic powder.
- 200 ml. of Coconut milk.
Instructions
BARLEY
- Place a pot on the stove at medium heat and add 1 cup of pearl barley.
- Pour 3 cups of water and a pinch of salt (you can use a flavourful broth to cook the barley to give a more rich flavor).
- Cook the pearl barley until it absorbs almost all the water or vegetable broth and with a chewy texture.
SOUP
Peel and dice the onion and the garlic cloves.
Place a large soup pot on the stove at medium heat add the onion and garlic with a pinch of salt and cook for a couple of minutes.
Then, pour the vegetable broth.
Peel and cut the carrots.
Add the carrots, tomato, and garden peas to the large soup pot. Stir well and cook until the vegetables are soft and tender.
Then, add the cooked pearled barley and stir well.
Pour the coconut milk and cook for 5 minutes more.
Serve your barley vegetable soup and enjoy a hot bowl of soup.
