This healthy avocado, spinach, and mushroom breakfast are adaptable and you can use any kind of mushroom you like or have, no need to rush to the grocery store. I used white mushrooms but, brown, porcini, shiitake, or oyster mushrooms can be great too!
As simple as this recipe is to make, is versatile too! If you want to have a healthy snack, an appetizer, or a side dish this recipe will be a delight. You can always add your favorite herbs and spices such as black pepper or chili flakes.

Avocado, spinach and mushroom
Super healthy, delicious, and easy to make breakfast or snack. This quick and simple vegan recipe is full of flavor and super nutritious.
Ingredients
- 1 Ripe Avocado.
- 4-6 Spinach leaves (approx.).
- 1-2 Mushroom(s).
- 1 Tbsp. of Water.
- 2 Gluten-free toasts.
- 1 Pinch of Himalayan salt.
Instructions
- Clean and slice the mushrooms and cook them in a saucepan with salt and 1 tbsp of water (you can use oil or butter) for 5 minutes.
- Cut and remove the skin of the avocado. Prepare a mashed with a fork, it doesn't have to be perfect or lump-free. Season with salt and mix well.
- Spread the mashed avocado on the toast. Place the spinach leaves and the mushrooms slices on top.
