Ingredients
- 1 Bag of Nachos chips.
- 1 Can of Chopped tomatoes.
- 1 Avocado.
- 1 Can of Sweetcorn.
- 1 Red onion.
- 1 Can of Red kidney beans.
- 3 Tablespoons of hummus.
- 1 Tablespoon of Olive oil.
- 1 Tablespoon of lemon juice.
- A pinch of salt.
- 1 Pickle/gherkin.
Instructions
- Open the can of chopped tomatoes and place them in a large bowl. Drain the tomato juice if you don't want a runny nacho mixture.
- Open the red beans and sweetcorn cans, rinse them well, and add them to the bowl.
- Dice the pickle.
- Peel the red onion and slice it. Add the onion and pickle to the bowl.
- Peel and dice the avocado and add it to the bowl.
- Mix all the ingredients.
- In a small bowl, add 3 tablespoons of hummus, 1 tablespoon of olive oil, and 1 tablespoon of lemon juice, and mix them well until you get a fluid sauce.
- Season to taste with salt, herbs, and spices of your choice.
- Place the nachos on a serving plate around the edge.
- Add the mixture to the center of the serving plate.
- Drizzle the hummus sauce on top of the nachos mixture.
