  • Veggies: you can use a wide variety of fresh or cooked vegetables, such as onions (red and green), sweet corn, tomatoes, diced bell peppers (green or red), jalapeños, etc.

Ingredients

  • 1 Bag of Nachos chips.
  • 1 Can of Chopped tomatoes.
  • 1 Avocado.
  • 1 Can of Sweetcorn.
  • 1 Red onion.
  • 1 Can of Red kidney beans.
  • 3 Tablespoons of hummus.
  • 1 Tablespoon of Olive oil.
  • 1 Tablespoon of lemon juice.
  • A pinch of salt.
  • 1 Pickle/gherkin.

Instructions

  1. Open the can of chopped tomatoes and place them in a large bowl. Drain the tomato juice if you don't want a runny nacho mixture.
  2. Open the red beans and sweetcorn cans, rinse them well, and add them to the bowl.
  3. Dice the pickle.
  4. Peel the red onion and slice it. Add the onion and pickle to the bowl.
  5. Peel and dice the avocado and add it to the bowl.
  6. Mix all the ingredients.
  7. In a small bowl, add 3 tablespoons of hummus, 1 tablespoon of olive oil, and 1 tablespoon of lemon juice, and mix them well until you get a fluid sauce.
  8. Season to taste with salt, herbs, and spices of your choice.
  9. Place the nachos on a serving plate around the edge.
  10. Add the mixture to the center of the serving plate.
  11. Drizzle the hummus sauce on top of the nachos mixture.
