EASY CREAMED SPINACH VEGAN RECIPE | HEALTHY AND SIMPLE

This healthy creamed spinach recipe is great as a dip with nachos or as a perfect side dish for special occasions such as a holiday meal. It is also affordable and simple to make, full of flavor and rich.

CREAMED SPINACH SEASONING

To season this delicious side dish I only use salt and nutmeg as a great classic combination of flavours that goes well with this cream sauce and the spinach. However, there are other lovely aromatic ingredients that you can add to this creamy spinach dish. To get more inspiration to season this recipe, check the list below.

  • Lemon juice.
  • Lemon zest.
  • Miso paste.
  • Onion powder.
  • Freshly ground black pepper.
  • Red pepper flakes.
  • Smoked paprika.

INGREDIENTS FOR CREAMED SPINACH

The traditional creamed spinach recipe, a classic holiday side dish, contains animal products, such as dairy products, including heavy cream and regular butter. Instead, I used plant-based ingredients, such as non-dairy milk. In addition to the ingredients I used for this delicious vegan dish, I added other alternatives you can try if you don’t have the ones I used. Lastly, you will find a list of other ingredients to include and make the best creamed spinach recipe.

DRY INGREDIENTS FOR THE CREAMY SAUCE

  • Flour or starch: to make this creamed spinach gluten-free I used corn starch and the result was great. Another gluten-free ingredient options are gluten-free flour and tapioca starch. 
  • Salt: I like to use Himalayan salts for my recipes as a delicious way to season dishes. However, you can also use kosher salt, table salt, sea salt, garlic salt, and Celtic salt.

WET INGREDIENTS FOR THE CREAMY SAUCE

  • Plant milk: I used oat milk that is also gluten-free. Other plant milk that you can use if you don’t have or don’t want to use oat milk are almond milk, cashew milk, rice milk, coconut milk, and soy milk. However, if you don’t want to or don’t have plant milk you can use vegetable broth.
  • Vegetable oil: to make the creamy sauce I used olive oil, but you can also try coconut oil, sunflower oil, avocado oil, and melted vegan butter.

SPINACH & LEAFY GREENS

Spinach is the star ingredient of this classic dish and as I have loads of frozen spinach at home I thought it was a great way to use them and make an easy side dish. However, if you prefer to use fresh spinach you can do so, but you will need to double the quantity I used for this recipe. For cooking you can also use the steamer or boil them.

Other leafy greens that you can use for this recipe (besides the spinach or baby spinach) are:

  • Bok choi.
  • Brussels sprouts.
  • Kale.
  • Chard.

ADDITIONAL INGREDIENTS

If you don’t want to make the creamy sauce made in this recipe, you also have other alternatives; for example, you can use vegan cream cheese, vegan cheese, vegan sour cream, cashew cream, and coconut cream.

SERVING SUGGESTIONS AND STORING

​Traditional recipes are normally used as a side dish with meat dishes; however, you can easily enjoy this healthy side dish with vegan alternatives.

To store this delicious creamed spinach, let the recipe cool down at room temperature and place it in an airtight container. Keep refrigerated until consumption.

Delicious creamed spinach recipe made with simple and easy ingredients. Enjoy this vegan and gluten-free recipe as a healthy side dish or as a dip.

Ingredients

  • 230 gr. of Frozen spinach.
  • 2 Garlic cloves.
  • 4 Tbsp. of Olive oil.
  • 4 Tbsp. of Cornstarch.
  • 500 ml. of Plant milk.
  • 1 Tsp. of Ground nutmeg.
  • ½ Tsp. of Himalayan salts.
  • 1 Tbsp. of Nutritional yeast.

Instructions

COOKING THE SPINACH

  1. Place your Spinach in a steamer and cook for about 15 minutes ( I used frozen spinach; if you use fresh spinach, the cooking time is a lot less, around 5 minutes).
  2. Once the spinach is cooked remove the excess water (you can use paper towels but that's optional).

CREAMY SAUCE

  1. Peel and chop the garlic cloves.
  2. Pour 1 tablespoon of olive oil into a large pan over medium heat, and add the chopped garlic cloves. 
  3. Saute the garlic cloves for two minutes.
  4. Then, in the same saucepan pour 3 tbsp. of olive oil and add 4 tbsp. of cornstarch mix well and cook for one or two minutes.
  5. Pour 1/3 of the plant milk and mix with a hand mixer.
  6. Keep adding the milk and mix at the same time until you get a thick sauce.
  7. Add the cooked spinach and integrate well.
  8. Season to taste with salt, nutmeg, and nutritional yeast.
  9. Lastly, for a great addition sprinkle of vegan parmesan cheese.
