This veggie bake recipe is easy to make and delicious. Has loads of flavors from the vegetables, sausage, and cheese.

Ingredients

  • 2 White onions.
  • 6 Tbsp. of Water.
  • ½ Celery stick.
  • 100 gr. of Mushrooms.
  • ½ Courgette.
  • 2 Tbsp. of Tomato puree.
  • 1 Pinch of Himalayan salt.
  • ½ Tsp. of Garlic powder.
  • ½ Tsp. of Dried parsley.
  • 1 Tbsp. of Gluten-free soy sauce.
  • 6 Vegan sausages (optional).
  • 200 gr. of Vegan cheese of your choice.

Instructions

  1. Preheat the oven to 180 °C degrees (356 °F approx.).
  2. Cook the sausages according to the package directions.
  3. Peel and dice the onions. Cook them in a pan with salt and 3 tbsp of water.
  4. Clean the celery and mushrooms, cut them, and add them to the onions.
  5. Peel (optional) and dice the courgette and add them to the pan. Stir from time to time.
  6. In a small bowl add the tomato puree, 3 tbsp of water, and mix well. Add this to the veggies and the salt, garlic powder, parsley, and soy sauce. Mix well and let them cook for another 5 minutes.
  7. Add the sausages to the mix.
  8. Pour this sauce into a glass roasting dish. Cut the vegan cheese and place them on top of the sauce.
  9. Cook in the oven for 20 minutes.
