  • Onions: I love the flavour this ingredient gives to this recipe. I used a white onion; however, another type of onion that goes great with this recipe is the red onion. Which you can either add it to the enchilada mixture and bake it in the oven, or you can chop it and add it raw when serving.
  • Sweet corn: I used canned sweet (same as the beans), as this is a simple recipe to make those busy weeknights. But you can use frozen or fresh sweetcorn too.
  • Extra veggies: You can always add some more colorful veggies to this Mexican food, such as red bell peppers, green bell peppers, etc.

This is a super easy and simple recipe that you can make in just a few minutes, and you can let it bake in the oven while your are entretening guests at home. Easy vegan cheese rice enchilada bake with beans: cozy, hearty, and weeknight-ready, layered with bold spices, melty plant cheese, and big comfort vibes inside.

Ingredients

  • 1 Cup of White rice.
  • 1 Can of Black beans.
  • 1 Can of Sweet corn.
  • 500 ml. of Tomato sauce.
  • 600 ml. of Vegetable broth.
  • 1 White onion.
  • 1 Cup of Vegan cheese.
  • 1 Teaspoon of Salt.
  • 1 Teaspoon of Paprika.
  • 1 Teaspoon of Cumin.

Instructions

  1. Preheat the oven to 180 degrees C or 400 F.
  2. In a large bowl, add all the ingredients and seasoning, except the vegan cheese. Just add half a cup.
  3. Mix well all the ingredients
  4. In a baking dish, add the cheesy enchilada rice mixture and spread evenly.
  5. Then, sprinkle the vegan cheese shreds on top.
  6. Cover the baking dish with aluminum foil or parchment paper.
  7. Place in the center of the oven and bake for 15 minutes.
  8. After 15 minutes, remove the cover and place it on the first level of the oven to melt the vegan cheese.
  9. Serve warm with or without tortillas, such as flour tortillas.
