SEASONING FOR MASHED POTATO CASSEROLE

Seasoning mashed potatoes is not only simple, but also about balance and depth. Salt enhances the natural flavor, while butter adds richness and creaminess. A touch of black pepper gives mild heat, and garlic or fresh herbs like chives bring aroma and brightness. Furthermore, you can add ground nutmeg for an aromatic flavor. Here you can find some of the classic seasonings for mashed potatoes, and some for the top of the casserole.

  • Salt: such as table salt, kosher salt, Himalayan salt, and sea salt. Additionally, you can use flavored salt, for example, garlic salt.
  • Garlic powder.
  • Onion powder.
  • Ground nutmeg.
  • Nutritional yeast, for a cheesy flavor.
  • Ground pepper, such as black pepper.
  • Fresh or dried herbs, for example, parsley.
  • Vegan parmesan cheese.

In addition to these herbs and spices, you can add flavor to your mashed potatoes with vegan butter, plant-based milk (such as cashew milk), vegan cheese, vegan cream, and olive oil. For an oil-free or milk-free option, you can use vegetable stock.

INGREDIENTS FOR MASHED POTATO CASSEROLE

MASHED POTATO

  • Potatoes: The star of this lovely recipe is the affordable and yummy potato. To make this dish, you can use Yukon gold potatoes or any potato variety that you use when making mashed potatoes. If you would like to replace the potatoes, you can also use butternut squash or sweet potatoes and make a sweet potato casserole.
  • Vegan milk: I normally use oat milk. If you want your mashed potatoes to have an even more creamy texture, you can use cashew nut milk or canned coconut milk. Other dairy-free options are rice milk and soy milk. I don’t recommend almond or hazelnut milk for mashed potatoes or savory dishes, as these milks are better for sweet recipes, such as smoothies.
  • Fat: for the mashed potatoes, you can add flavor with vegan butter or any vegetable oil, for example, olive oil. If you want this recipe to be oil-free or reduce the amount of fat, you can avoid these ingredients. For the topping sauce, you can use these ingredients to cook the onions, or for the oil-free option, add salt, water, or vegetable stock.

TOPPING

  • Cashew nuts: Chopped cashew nuts are a great ingredient to replace breadcrumbs and to make this recipe gluten-free. If you have a nut allergy, you can avoid this ingredient or use the traditional breadcrumbs. Additionally, you can crush cornflakes for a gluten-free and nut-free option.
  • Vegan cheese: this ingredient can be tricky, as not all vegan cheeses melt well. Sometimes, with this ingredient is best to try different brands to find the one you like and what is available in your area as well.

SAUCE

  • Sauce topping: I used onion, carrot, and mushroom. But you can add other veggies of your choice, such as leek, garlic cloves, peppers, green onions, green beans, etc. Also, if you want, you can replace the passata with chopped tomatoes.

HOW TO SERVE THIS RECIPE?

This delicious and affordable recipe is very versatile; you can serve it as a starter, side dish, or main dish too.

  • Salads.
  • Fritters, such as veggie rice fritters.
  • Roasted vegetables, for example, Brussels sprouts, for Christmas time.
  • Vegan burgers.
  • Vegan meatloaf.

Lastly, when serving this dish, you can pour a delicious creamy sauce on top. For example, you can use a delicious vegan gravy sauce, made of mushrooms, canned coconut cream, and aromatic spices.

This vegan mashed potato casserole is creamy, comforting, and dairy-free, layered with savory herbs and baked until golden for the perfect cozy dinner.

Ingredients

  • 800 grams of Potatoes.
  • A pinch of Salt.
  • 3 Tablespoons of vegan butter.
  • 150 ml. of Vegan milk.
  • 1 Teaspoon of Himalayan salt.

topping

  • 30 grams of chopped cashew nuts*.
  • 50 grams of vegan cheese.

Sauce

  • 1 Onion.
  • 1 Carrot.
  • 50 grams of Mushrooms.
  • 150 ml. of Passata.
  • 1 Teaspoon of garlic powder.
  • 1 Teaspoon of Paprika.
  • Half a teaspoon of Himalayan salt.

Serving

  • Chopped fresh basil

Instructions

MASHED POTATOES

  1. In a large pot, pour water with a pinch of salt and bring to a boil.
  2. Wash and peel the potatoes. Then, cut them into cubes.
  3. When the water is boiling, add the potatoes and cook for about 15 minutes, or until tender and soft enough to make a mash.
  4. When the potatoes are ready, drain the water and mash them with a potato masher. If you wish, you can also use a food processor or a hand mixer.
  5. Then, add the dairy-free butter and mix.
  6. Pour the vegan milk (I used oat milk) and integrate well.
  7. Season to taste with salt and spices of your choice.
  8. In a casserole dish or a baking dish, place the mashed potatoes and spread them evenly.

​TOPPING

  1. Chop the cashew nuts and sprinkle them on top of the mashed potatoes.
  2. Add the vegan cheese.

SAUCE 

  1. Preheat the oven to 180C/350F.
  2. Place a large saucepan on the stove at medium heat.
  3. Peel and dice the onion, and peel and grate the carrot.
  4. Add to the large saucepan with a pinch of salt.
  5. Clean and chop the mushrooms into small pieces. Add them to the saucepan and saute for a few minutes.
  6. Then, pour the pasatta and season to taste.
  7. When your sauce is cooked, pour it on the vegan potato casserole.

BAKING

  1. Cover the casserole dish with aluminum foil or parchment paper.
  2. Place it in the center of the preheated oven and bake for around 15 minutes.

SERVING

  1. Serve warm with a sprinkle of fresh chopped basil.

Notes

*You can use raw cashew nuts or roasted and salted.
