This veggie bake recipe is easy to make and delicious. Has loads of flavors from the vegetables, sausage, and cheese.
Ingredients
- 2 White onions.
- 6 Tbsp. of Water.
- ½ Celery stick.
- 100 gr. of Mushrooms.
- ½ Courgette.
- 2 Tbsp. of Tomato puree.
- 1 Pinch of Himalayan salt.
- ½ Tsp. of Garlic powder.
- ½ Tsp. of Dried parsley.
- 1 Tbsp. of Gluten-free soy sauce.
- 6 Vegan sausages (optional).
- 200 gr. of Vegan cheese of your choice.
Instructions
- Preheat the oven to 180 °C degrees (356 °F approx.).
- Cook the sausages according to the package directions.
- Peel and dice the onions. Cook them in a pan with salt and 3 tbsp of water.
- Clean the celery and mushrooms, cut them, and add them to the onions.
- Peel (optional) and dice the courgette and add them to the pan. Stir from time to time.
- In a small bowl add the tomato puree, 3 tbsp of water, and mix well. Add this to the veggies and the salt, garlic powder, parsley, and soy sauce. Mix well and let them cook for another 5 minutes.
- Add the sausages to the mix.
- Pour this sauce into a glass roasting dish. Cut the vegan cheese and place them on top of the sauce.
- Cook in the oven for 20 minutes.
