LAVA VEGAN CHOCOLATE CAKE | EASY MOLTEN RECIPE
I love dark chocolate and making desserts, so I looked forward to trying a vegan lava cake recipe. Although this decadent dessert is ideal for a special occasion to treat and surprise your family and friends or Valentine’s Day, this simple and easy vegan chocolate lava cake won’t take longer than making a regular cake.
ADDITIONAL FLAVORING FOR LAVA CAKES
This is a very chocolaty lava cake full of flavour and a great comforting dessert to indulge yourself and your loved ones. For this recipe, I used vanilla extract as it works well with this recipe, and vanilla and chocolate are a classic combination of flavours that go lovely together. LAVA CAKES INGREDIENTS
I tried to make these mini lava cakes dessert as easily and simply as possible; therefore, the ingredients I chose should be fairly easy to get and affordable too. In addition to this, I will give ideas and alternative ingredients to the ones I used to make the cake batter.
- Dark chocolate: as the star of this recipe I used a good quality chocolate with 70% of cocoa. One chocolate bar (of around 180 gr or 200 gr) should be enough to make this recipe. If you don’t have chocolate bars you can also use dark chocolate chips, dairy-free chocolate chips, or vegan chocolate chips.
- Flour: to make this even easier I used self-raising flour and the result was very nice. If you prefer you can use all-purpose flour and add baking powder or bicarbonate of soda as a raising agent. Moreover, if you want to make this cake butter gluten-free you can try gluten-free flour such as almond flour.
- Sugar: I used regular sugar as it was the one I had at home at the moment of making this recipe. If you wish to use other types of sugar you can also use: coconut sugar, brown sugar, demerara sugar, and molasses sugar. Also, you can replace sugar with maple syrup or agave.
- Salt: I like to use Himalayan salts, another salt that you can also use is sea salt, regular salt, or kosher salt.
WET INGREDIENTS
- Plant milk: I normally use oat milk because I like its creamy consistency and subtle flavor. Other plant milk you can also use for this recipe are soy milk, almond milk, coconut milk, rice milk, and cashew milk.
- Oil: There are many vegetable oils that you can use for this recipe. In addition to the one I used, which is sunflower oil, you can also use vegetable oil, avocado oil, olive oil, and coconut oil. This ingredient will also be used to make the cake batter, melt the chocolate, and grease the baking tray.
- Egg replacement: Since eggs are one of the ingredients of the traditional lava cake, I used peanut butter to replace them. However, if you have nut allergies or prefer not to use peanut butter, you can use apple sauce, banana puree, or apple cider vinegar.
SERVING SUGGESTIONS FOR CHOCOLATE LAVA CAKES
These vegan lava cakes can be served as a great and delicious dessert on their own or with:

VEGAN LAVA CAKE RECIPE | QUICK AND EASY
Delicious and indulge vegan lava cakes recipe made with simple ingredients. Enjoy this quick and easy comforting dessert with vanilla ice cream or fresh berries.
Ingredients
cake batter
- 45 gr. of Dark chocolate.
- 6 Chocolate squares.
- 80 gr. of Self-raising flour.
- 45 gr. of Cocoa powder.
- A pinch of Salt.
- 80 ml. of Plant milk.
- 1 Tsp. of Vanilla extract.
- 2 Tbsp. of Peanut butter.
- 5 Tbsp. of Sugar.
- 4 Tbsp. of Vegetable oil.
Baking
- 2 Tbsp. of vegetable oil.
- Flour or cocoa powder.
Instructions
- Preheat the oven to 180 °C degrees (356 °F approx.).
- To make this molten lava cake recipe I used a muffin tin and I made 6 mini lava lava cakes. You can also use small ramekins. Use oil or vegan butter to grease the muffin tin or the baking tray you are using, be generous as this will prevent the lava cake from getting stuck and it will be easy to remove from the tin. Sprinkle flour or cacao powder. Additionally, you can also use parchment paper.
- In a large bowl add the dry ingredients: flour, sugar, salt, and cocoa powder. Mix them.
- In a pan add 1 tbsp. of vegetable oil or vegan butter and the 45gr of dark chocolate. Heat at medium heat until melts and integrates well.
- In a medium-sized bowl add the wet ingredients: melted chocolate, plant milk, peanut butter, vanilla extract, and 3 tbsp. of vegetable oil. and mix them well.
- Pour the wet ingredients into the dry ingredients and make the cake batter.
- Place one layer of cake butter into the muffin tin.
- Then, add one chocolate square in the centre of each ramekin, in the middle of the batter.
- Add the remaining batter on top of the ramekin.
- Bake in the oven for around 14 minutes. Don't overcook as this might prevent to get a fluffy cake.
- Remove from the oven, place the lava cake into dessert plates, and serve warm at room temperature.
- Add toppings if you wish and enjoy!
Notes
With this recipe I made 6 small or mini lava cakes using a muffin tray.
