EASY VEGAN CHICKEN RAMEN NOODLES SOUP RECIPE
Ramen soup is a popular Japanese noodle soup with a unique and delicious umami flavor. Although not all the ingredients for a ramen soup are vegan-friendly, you can adapt the recipe as I did.
For this easy vegan ramen recipe, you will need a few ingredients. Moreover, if you want to change or replace them with other vegan-friendly options, you can do so. For example, I’m using vegan chicken for this recipe; however, if you prefer to avoid this ingredient you can replace it with extra firm tofu.
RAMEN SEASONING INGREDIENTS
Some of the ramen noodle soup recipes you can find have as one of the main ingredients chicken stock or pork broth. However, for this recipe, I used a vegetable flavorful broth. Moreover, you can change the consistency and texture of the vegetable broth by adding coconut milk. You can personalize this recipe according to your preferences; for example, make this ramen more spicy, creamy, or sweet and sour. - Soy milk.
- Maple syrup.
- White miso paste and/or red miso.
- Yeast extract.
- Hot sauce: such as chili garlic sauce,

RAMEN NOODLE SOUP INGREDIENTS
This vegan chicken ramen soup was made with onions, carrots, garden peas, broccoli, and vegan chicken. However, you can replace or change these ingredients to the ones you already have at home or the ones you like better. These other vegetables can be fresh or frozen. Lastly, if you don’t want to use vegan chicken you can replace it with tofu or soy curls.
- Sweetcorn.
- Sweet potatoes.
- Fresh green onions/spring onions.
- Baby bok choy.
- Red onion.
- Bell peppers.
- Bamboo shoots.
- Dried shiitake mushrooms.
In addition to this, this great recipe was made with wheat flour noodles al dente; however, if you want to make this vegan chicken ramen gluten-free you can use rice noodles or other gluten-free noodles that you can use in soup recipes.
RAMEN BROTH
Traditionally, broth is made of meat and bones from different types of animals; such as beef, pork, and chicken. However, you can make this recipe vegan without using any animal products. So, to make a vegetable broth or a vegan ramen broth you have two options depending on the time you have to make this recipe. If time is not an issue, place a cooking pot on the stove to low heat to medium heat with water (ideally filter water). Then, add salt and trimmed, roughly chopped vegetables of your choice, which can be:
- Celery.
- Onions.
- Carrots.
- Leek.
- Garlic.
However, making this vegetable broth can take more than one hour, you can replace this homemade vegetable broth with vegetable stock or with a vegetable stock pot added to boiling water.

EASY VEGAN CHICKEN RAMEN NOODLES SOUP RECIPE
Easy and comforting vegan chicken ramen recipe. This simple and nutritious recipe made with a few ingredients can make a great meal in just 25 minutes.
Ingredients
- 2 Ramen noodles nests.
- 3 Cups of Vegetable broth.
- 200 gr. of Vegan chicken pieces.
- 1 Onion.
- 1 Shredded carrot.
- 100 gr. of Garden peas.
- 100 gr. of Broccoli.
- 3 Tbsp. of Sesame oil.
- 1 Tsp. of Soy sauce.
- 1/2 Tsp. of Sea salt.
- 1/2 Tsp. of Garlic powder.
Instructions
- Cook the ramen noodles following the packing instructions.
- Peel and chop the onion and the carrot.
- Place a saucepan on the stove at medium heat with 1 1/2 tbsp. of sesame oil.
- Add the onion and carrot and fry for around 5 minutes.
- Then, add the broccoli and the garden peas, cover with a lid a cook for around 5 minutes more.
- In another saucepan, cook the vegan chicken with 1 1/2 tbsp sesame oil.
- In ramen bowls (or soup bowls) add the cooked noodles.
- Then add the vegetables and the vegan chicken.
- Pour the hot broth and soy sauce.
- Sprinkle garlic powder and adjust the seasoning with the sea salt.
