Traditional cloud bread has non-vegan-friendly ingredients; such as eggs, cow milk, and cream cheese. So, if you love cloud bread and want a vegan option for this great recipe, here you can find an easy recipe made with vegan ingredients. Moreover, this plant-based version is a great option for people following a low-carb diet, keto diet, vegan, vegetarian, and those with dietary restrictions as this recipe is also gluten-free and dairy-free. 

SIMPLE INGREDIENTS

This vegan cloud bread recipe was made of simple ingredients that are also easy to find.

  • Gluten-free flour: I wanted to use chickpea flour for this recipe, but you can try other gluten-free flour such as almond flour.
  • Milk: a great alternative to cow milk is the vegan milk. Although I used oats milk as I like the taste and the consistency, there are many other options that you can use. For example, soya milk, rice milk, cashew nuts milk, almond milk, coconut milk, etc.
  • Salt: I normally use Himalayan salts for my recipes. However, you can use other types of salts; for example, table salt, kosher salt, fine sea salt, or even flavored salts such as garlic salt to give a lovely aromatic flavor to this vegan cloud bread.
  • Aquafaba: to replace the eggs (the egg whites in particular) I used aquafaba, the water where chickpeas were cooked. You can buy aquafaba in the stores or drain the chickpeas and use that water if you have a can of chickpeas.

SERVING SUGGESTIONS

This great gluten-free cloud bread recipe is ideal for savoring toppings or to eat together with other recipes; such as pasta dishes. Furthermore, if you add sugar to this recipe, you can enjoy cloud bread as a sweet dessert with fruit toppings. Here I listed options to season and to add as topping for both, sweet and savory. Bear in mind that some ingredients can be in both lists or you can also make sweet and sour cloud bread.

SAVORY SEASONINGS

  • Onion powder.
  • Curry powder.
  • Paprika/smoked paprika.
  • Fresh or dried herbs; such as oregano, parsley, coriander, rosemary, Italian herbs, etc.
  • Black pepper, cayenne pepper, and white pepper.

  • Vegan cheeses.
  • Hummus; such as carrot hummus, classic hummus, red lentil hummus, etc.
  • Guacamole.
  • Babaganush.
  • Vegan pâtés; for example black olive pâté, asparagus pâté, and mushroom pâté.
  • Roasted garlic and white bean dip.
  • Roasted vegetables and fresh vegetables.
  • Seeds; such as sesame seeds, pumpkin seeds, etc.
  • Nuts; for example walnuts, pistachios, almonds, cashew nuts, etc.

SWEET FLAVORINGS

  • Vanilla extract.
  • Almond extract.
  • Ground cinnamon.
  • Cocoa powder.
  • Desiccated coconut.
  • Fresh zest, such as lemon, lime, or orange.

SWEET TOPPINGS

  • Fresh fruit; such as berries, bananas, mango, etc.Dried fruit; for example, cranberries, raisins, prunes, etc.
  • Almond butter.
  • Peanut butter.
  • Vegan Greek yogurt.
  • Others; such as chocolate chips, mini chocolate chips, banana chips, apple chips, etc.

Lastly, even though I think this cloud recipe is great to have with toppings you can also make cloud bread pizza by adding tomato sauce and cheese and bake them in the oven. Furthermore, this can also be used as burger buns.

EASY TO MAKE VEGAN CLOUD BREAD RECIPE

Dairy and gluten-free cloud bread recipe made with plant-based milk and chickpeas flour. Enjoy this light and fluffy bread with your favorite toppings and fillings.

Ingredients

  • 150gr. of Chickpea flour.
  • 180ml. of Plant-based milk.
  • 1 Cup of Whipped aquafaba.
  • 1 Tsp. of Garlic powder.
  • 1/2 Tsp. of Salt.
  • 1 Tsp. of Baking powder.

Instructions

  1. Preheat the oven to 180 degrees or 400 F.
  2. On a baking sheet place parchment paper.
  3. In a large bowl sieve the chickpea flour and add the rest of the dry ingredients (garlic powder, salt, and baking powder). Mix well.
  4. Then, pour the plant-based milk and integrate it well. For the plant-based milk I used oats milk, but you can use others.
  5. To make the whipped aquafaba* I pour the liquid of a tin of chickpea beans into a bowl of a stand mixer (you can also use a hand mixer or electric mixer). Beat the aquafaba until you get a firmer consistency or until you can get stiff peaks.
  6. Take one cup of the whipped aquafaba add it to the cloud bread mixture and integrate it well carefully with a wooden spoon.
  7. With a large spoon take a portion of the cloud bread mixture and place it on the prepared baking sheets.
  8. Place the baking sheets in the oven and bake for around 10 to 15 minutes**.
  9. When they are golden brown, check that are fully cooked. Your cloud bread should have a fluffy texture inside.
  10. Let the cloud bread cool down at room temperature before consumption.
  11. If you have leftovers o you are making this recipe in advance you can store the cloud bread in an airtight container.

Notes

*For best results when whipping the aquafaba use cream tartar. Add half a teaspoon of cream tartar to the aquafaba.

** Cooking times can vary depending on the oven you are using, I used an electric fan-assisted oven.
