To prepare this super easy vegan broccoli soup you will need just a few main ingredients and condiments. This healthy recipe is gluten and oil-free, it doesn’t contain vegan butter or margarine. Also, even though this soup is super creamy you can always add other ingredients (besides potatoes) to make this soup creamy, rich, and full of flavor, such as:
- Coconut cream or coconut milk.
- Cornstarch.

Broccoli soup with almonds
This broccoli soup healthy recipe is super easy to make with simple-to-find ingredients. Here you will find a step-by-step how to make homemade broccoli soup.
Ingredients
- 1 Litre of Water.
- 300 gr. of Broccoli*.
- 1 Onion.
- 1 Garlic clove.
- 1 Tbsp. of Vegetable vegan Bouillon powder.
- 2 medium potatoes.
- 1 Pinch of Himalayan or sea salt.
- ½ Tsp. of Garlic powder.
- 1 Pinch of Black pepper (optional).
- 12 Almonds.
Instructions
- Pour 1 liter of water into a cooking pot and place it on a hob at medium heat.
- Add 1 tbsp of vegetable bouillon powder and mix well.
- Peel and dice the garlic, onion, and potatoes. Add them to the cooking pot.
- Then add the broccoli, you can leave it in big chunks or cut the broccoli into small pieces. As I used frozen broccoli and place them in the cooking pot directly from the freezer.
- Cook the soup for around 30 minutes or until all the vegetables are cooked and tender.
- Use a blender or food processor to make a creamy broccoli soup.
- Serve in a soup bowl and sprinkle almonds to your taste. You can use whole, flakes, chopped, peeled, halves, or almond pieces.
