Delicious vegan chickpea frittata muffin: gluten-free, protein-rich, naturally sweet, and perfect for healthy snacks, breakfast, or on-the-go treats anytime.

Ingredients

  • ¾ Cup of Chickpea flour.
  • ¼ Cup of Cornstarch.
  • 1 Teaspoon of baking powder.
  • 1 Teaspoon of Garlic powder.
  • 1 Teaspoon of Paprika.
  • ½ of Himalayan salt.
  • 125 gr. of Asparagus.
  • 1 Tomato.
  • 1 White onion.
  • 1 Cup of Water.

Instructions

CHICKPEA BATTER 

  1. Preheat the oven to 180 °C (356 °F, approximately).
  2. In a large bowl, combine all the dry ingredients: chickpea flour (also known as garbanzo bean flour), cornstarch, baking powder, garlic powder, paprika, and salt. 
  3. Mix them well.
  4. Add half a cup of water, mix, and then add the rest of the water and mix well until you get a smooth consistency.
  5. Peel and cut the onion into small cubes. 
  6. Wash the tomato and cut it into cubes (I additionally remove the skin and the seeds, but that's optional).
  7. Wash and cut around 3 cm of the Asparagus bottom, then cut the asparagus into 1cm portions.
  8. Add the vegetables to the chickpea flour batter and integrate well.

COOKING

  1. In a muffin tin, you can either place muffin cups, cupcake liners, or muffin liners. Another option is to spread olive oil or vegan butter on the muffin tray.
  2. With the help of a spoon, fill the muffin pan.
  3. Place the muffin pan in the center of the preheated oven.
  4. Cook these savory muffins for around 35 to 40 minutes.
  5. Once your chickpea frittata muffins are cooked, let them sit at room temperature to cool down.
  6. Then, with the help of a butter knife, remove them from the muffin pan. This step is only if you oiled the muffin pan.
