VEGAN STEW

Ingredients
- 1 Large Yellow onion.
- 3 Garlic cloves.
- 1 Large Carrot.
- 150 gr. of Mushrooms.
- 1 Celery stick.
- 2 Tbsp. of Tomato purée.
- ½ Cup of Basmati rice.
- 2 Cups of Vegetable stock.
- ½ Tsp. of Paprika.
- ½ Tsp. of Oregano.
- A pinch of salt.
- Fresh parsley (optional).
Instructions
- Peel and chop the yellow onion and garlic cloves.
- Place the chopped onion and minced garlic in a large pot or a Dutch oven. Cook them with a pinch of salt until tender (add water or olive oil).
- Peel and cut the carrot. Then, clean the mushrooms and cut them into cubes or slices.
- Place the carrots and sliced mushrooms in the vegetable stew and stir well.
- Wash the Basmati rice until the water comes clean. Add the rice to the vegan stew and pour 2 cups of vegetable broth.
- Then, add the tomato paste and season to taste with soy sauce, paprika, and oregano.
- Cook your hearty vegan stew at medium heat* and let the stew simmer for around 20 to 25 minutes stirring occasionally, or until the vegetables are fork tender.
